Yummy side dish (can also be served as a meal). We served this with the Chili-lime Steak (delish). We discovered it's especially yummy to put some black beans, chili-lime steak, chopped romaine lettuce, cheese, and a dab of ranch dressing in a tortilla and eat it that way like a burrito. MmmmMMmm.

INGREDIENTS:
1 Tbs olive oil
2/3 c diced onion
2-3 garlic cloves, pressed or finely minced
2 (15-oz) cans black beans, drained and rinsed
1 c chicken broth (or 1 cup water plus 1 tsp chicken bouillon)
1/4 tsp cumin
1/4 tsp coriander
1/4 tsp oregano
1/4 tsp salt
1/4 tsp pepper
Juice of 1 lime
Shredded Monterey Jack or cheddar cheese, for garnish, optional
INSTRUCTIONS:
In a large skillet, heat some olive oil over medium-high heat. Saute the onions for about 3 minutes or until they just start to become translucent. Add garlic and saute for about 30 seconds more.
Add beans, broth, and remaining seasonings and bring to a boil. Reduce heat to low and simmer gently for about 7 minutes, stirring occasionally.
When the beans are done cooking, remove from heat and add in the juice of one lime. Using hte back of a spoon or rubber spatula, mash about 1/4-1/2 of the beans to thicken the consistency. if you want a soupier consistency, just add a little more broth.
To serve, sprinkle each serving with shredded Monterey Jack or cheddar cheese, as desired.
MAKES: 6-8 servings as a side dish.
