Spaetzle

• INGREDIENTS: 2 eggs, beaten

• 1/4 cup milk

• 1 cup all purpose flour

• 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 2 quarts water (to boil in)

  • 1 teaspoon salt (for water)

  • 2 tablespoons butter, melted

INSTRUCTIONS:

• 1. Mix eggs, milk, flour, salt, & pepper

  2. Batter will be THICK

1. Heat water and tsp salt to boiling

   1. Press batter through Spaetzle press or collander or cake decorating bag a few tablespoons at a time

   2. If you make this often, a spaetzle press is worth the investment

   3. Stir to prevent sticking

2. Boil until it floats then boil a little bit more (until it's done of course)  Maybe 2-4 minutes. ??

3. Drain.

4. Pour melted butter on top & mix well. 

MAKES: about 4 servings... but who wants just one serving of this...which is why we usually quadruple the recipe.  This can also be served just with heated sauerkraut which is a LOT easier to make than sauerbraten.  It can also be served with just bacon pieces as shown.   Or a mixture of all.  

 It could probably be served in a number of ways.  I like the vinegar taste that sauerbraten or sauerkraut gives it.
