Perfect Baked Potato

A recipe from my UVU Community Ed basic cooking class. These potatoes are so fluffy and light! From the recipe: "Poke the potatoes with a fork before putting them in the oven. DO NOT cover potatoes in foil! It holds in steam and causes limp, damp skins and dense flesh."

INGREDIENTS:

INSTRUCTIONS:

1. Adjust oven rack to middle position.

2. Heat oven to 350 degrees.

3. Place the potatoes directly on the oven rack and bake for 75 minutes.

4. Remove the potatoes from the oven and immediately pierce them with a form to create a dotted "X" on the top of each potato.

5. Push in at the ends of each potato to push the flesh up and out.

6. Serve immediately.

        (or put back on oven tray and turn oven off or put in cooler then towel and cover to last for hours.)
