Egg Toast Cakes
From the kitchen of Gramps, a cross between French Toast, pancakes, and fried eggs. Very simple to make and quite good.
INGREDIENTS:
2 Eggs
2 rounded tablespoons pancake flour (the picture on the right is when I used 3, and it was too much)
Sprinkle of salt
A good amount of pepper
Bacon grease if you have any, regular oil or cooking spray if you don't
INSTRUCTIONS:
Grease and heat a small frying pan (8-10" in diameter)
Mix the rest of the ingredients well.
Pour ingredients into hot greased pan.
Cook over low heat until lightly browned on both sides, and middle is solid. Don't overcook!
Eat like a pancake with butter, syrup, and if you are a Groneman, a generous amount of peanut butter.
