"My doctor told me to quit throwing dinner parties for 4 unless there are 3 other people - [sigh]" - Gramps
Looks gross because it's green, but tasted very awesome, and was super quick!
From the kitchen of: Katie via Mel's
4-6 tilapia fillets (about 2 lbs) - again we used swai fillets because that's what I have at the moment.
1-2 jalapeno peppers, seeded and chopped. We did 2 peppers, and it definitely had a kick - we liked it, but others might want less.
4 garlic cloves
2 Tbs grated ginger
4 Tbs soy sauce (low sodium if you have it)
1/3 C chicken broth or fish stock
2 tsp sesame oil (I only had olive oil)
2/3 C chopped cilantro (and extra for garnish if you're in to having a fancy plate)
Preheat oven to 475.
Rinse fillets and pat dry.
Season lightly with salt and pepper on both sides.
Use cooking spray for glass/pyrex baking dish and place fillets inside.
Place all other ingredients into the blender or food processor and blend until fine.
Pour sauce over the fish - run in lightly.
Bake for 8-10 min. until fish flakes easily and is cooked through.
We served this on a bed of rice and tried to drizzle any extra sauce on to the fish and rice.
