THIS IS ONE OF DAD BOREN'S FAVORITES, BUT I DON'T REALLY LIKE IT... THIS CAN BE MADE AS A DROPPED CANDY, OR AS THE CENTER FOR PECAN LOGS...From the kitchen of: The BorensINGREDIENTS:
2 ½ C sugar
½ C hot water
2/3 C light corn syrup
¼ tsp. salt
2 egg whites
1 tsp. vanilla (or other extract)
Drop or two of food coloring if you’re going for awesome color!
INSTRUCTIONS:
Combine sugar, syrup, salt, and water and stil until it comes to a boil, over high heat.
Cook without stirring to brittle stage (see Candy Testing) when tested in ice water.
While syrup is cooking, beat egg whites until stiff.
Gradually add hot syrup to egg whites - beating it in with the electric mixer (it's usually helpful to have another person at this stage either pouring the syrup VERY slowly into the egg white bowl while you beat with the mixer, or swap spots... basically you need 2 people).
Continue beating until candy loses its shine - you may need to finish mixing by hand when the candy gets too stiff for the mixer.
Drop quickly into dollops onto waxed paper, or roll into cylinders for pecan logs.
From browsing the Internet for pictures, it looks like some people add nuts to their divinity - I guess you can if that's really something you want to subject yourself to.
