Jam Sandwich Cookies

We made these for an Activity Days activity and brought them as a thank you to our local fireflighters. This recipe is from one of the leaders. These are surprisingly good! They're more like a bar than a cookie, since you cut them into whatever size you want.

INGREDIENTS:

INSTRUCTIONS:

1. Blend shortening and sugar together. Add eggs, almond extract.

2. In a small bowl, combine flour, baking powder, and salt. 

3. Add dry ingredients with wet ingredients. Mixture may be kind of dry and turn into small balls. That's okay!

3. Take 3/4 of mixture and put into bottom of pan (ie cookie sheet) and even out with your hand to cover the bottom of the pan. 

4. Spread a thin layer of jam over the dough (not too much; a thin layer will do, but, you can use however much you want).

6. Using fingers, sprinkle or crumble remaining dough evenly over the top of the jam. It doesn't have to cover completely though.

7. Bake at 400 degrees for 12-15 minutes or until lightly brown on top (Could be longer--keep an eye on them)

8. Cool and enjoy!

MAKES: A full baking sheet full, so you can cut them as big or as small as you want
