I saw this on Pinterest and many people had commented it was their "favorite potato recipe". I made it today and served it to Marilyn for lunch and she said "It's a 10 out of 10" and she also said she thinks this is her favorite potato recipe. I thought they were decent myself and to top it off, it's super easy, especially since the recipe doesn't have any measuring.

INGREDIENTS:
Red Potatoes - Enough for the pan you're using and/or the people you are feeding
Chili Powder (Marilyn: I have discovered that Chili Powder sets me off...so don't bother making this for me)
Your favorite seasoning salt
Pepper
Butter
Ranch Dressing (Marilyn can't do Ranch dressing at all-it has Mayo. Use some sour cream in mine instead, and a little garlic salt, onion salt and Dill)
Shredded cheese(s)
Bacon Bits & Green Onions (optional, if you're feeling fancy)
INSTRUCTIONS:
Preheat oven to 400 degrees
Cut the potatoes into bite size pieces and dump them into a baking dish
Sprinkle with Chili Powder, Seasoning Salt, and Pepper...not too much.
Put several pats/dollups of butter around on top
Cover with aluminum foil and bake at 400 for one hour
Remove from oven
Throw on a couple of handfulls of the cheese of your choice
Drizzle with Ranch Dressing to taste
Stir it all together then put back in the oven UNCOVERED for about 5 minutes.
After removing from oven, sprinkle on bacon bits and chopped green onions (optional)
KIM'S ALTERNATE INSTRUCTIONS:
I was in a hurry so I threw the baking dish of potatoes in the microwave until the potatoes just started to soften up, then put them in the oven for 30 minutes instead of the full hour. I also changed the recipe by putting them under the broiler for about 1 minute instead of just baking them the additional 5 minutes the recipe calls for. I didn't use the bacon or onion and they were delicious.
MAKES: Cheesy Ranch Roasted Potatoes...whadidya expect, green jello or popcorn?
