Yogurt
Use fresh yogurt that has active cultures and less than 9 grams of sugar/serving and you need a good food thermometer.

Milk - Whole makes creamier but 2 or 1% will work
INSTRUCTIONS:Make sure pot and tools, everything is CLEAN.
Do not use a warm pot...make sure it's cold
Set aside 1 tablespoon of yogurt in small bowl
Pour 1/2 gallon (8 cups) milk into the instapot cooker
Move the pressure valve to the SEALING setting
Push YOGURT and quickly push ADJUST
At first your cooker will read 8:00 but after pushing ADJUST it should say BOIL
A half gallon will take about 25 minutes to reach 180° or higher
If it doesn't reach 180° on your pot, leave milk out 30 minutes before starting and/or wisk every 10 minutes during the boil cycle
You can use the saute/low setting while constantly whipping your milk until it reaches 180°
Bring your milk down to 110°. This is important. You can use ice/cold water in a sink to do a quick cool down of the instapot liner. Stir steadily without scraping the bottom until it reaches 110°.
Take some (a cup?) of the milk out and mix it with the starter in the bowl until smooth.
Pour the warmed starter into the instapot and give it a quick wisk. Don't scrape the bottom. Put the liner back into the instapot.
Push the YOGURT button It will say 8:00 and NORMAL The yogurt will cook for 8 hours which is about right. More than that it gets tangy.
If you want thick yoghurt, you have to strain the whey out, otherwise it will be normal yogurt. Large coffee filters work well.
ALTERNATE INSTRUCTIONS FOR NON-INSTANT POT (a lot easier if you ask me!)
Scald 3-3/4 cup milk
Cool to 110 degrees
Add 1/4 cup plain, live culture yoghurt
Turn on oven light (It's the only heat source to use for this recipe)
Put in oven for 9 hours (or longer if you want it more tart or thicker)
Don't open oven during that time
NOTE: I use a packet of crystal light to flavor 2 cups of yoghurt. Add a little bottled fruit and some Grape Nuts. Mmmmmm.
