Salt & Vinegar Broiled Potatoes (GF)
Found this on Pinterest.com and I pinned it as a recipe to try. We tried it. At first bite it was really different, but after a few bites I got used to it and it was pretty good. Marilyn said the recipe is a keeper.

INGREDIENTS:
1 lb or so of potatoes. Scrubbed clean with skins still on. Cut about 1/4" slices
2 cups vinegar. The original recipe calls for white vinegar, I used apple cider vinegar and it was good.
Some olive oil. The recipe calls for extra virgin but I didn't bother to ask about it's sex life.
Salt & Pepper
INSTRUCTIONS:
Put the vinegar and potato slices in a small pot and bring to a boil, then simmer until they just START to get tender (test with a fork - about 8 minutes).
Let cool in liquid for 20 minutes.
Drain the potatoes and pat dry with a paper towel
Arrange on a cookie sheet (with sides)
Sprinkle GENEROUSLY with olive oil, salt, & pepper
Toss them around until all sides are coated
Spread them out and broil until slightly browned (7 minutes)
Turn them over and broil the other side until browned (5 minutes)
Grab, root, and growl.
