Seriously tastes just like the sweet potato at Texas Roadhouse. Delicious, light, fluffy, yummy. This recipe is from my UVU Community Ed cooking class. According to the recipe, you can cook up to six potatoes at a time without altering the cooking time.
INGREDIENTS:
4 small sweet potatoes (about 2 pounds), scrubbed and lightly pricked with a fork
2 tablespoons vegetable or olive oil
Butter
Salt
Pepper
(Or, try it with butter, cinnamon, and brown sugar)
INSTRUCTIONS:
1. Adust oven rack to middle position.
2. Heat oven to 400 degrees.
3. Rub the potatoes with oil and arrange on a foil-lined baking sheet (otherwise it will make a mess!) as far apart as possible.
4. Bake until a knife tip slips easily into the center of a potato, 40 to 50 minutes. Remove the potatoes from the oven and pierce with a fork to create an "X" on top of each potato.
5. Push the flesh up and out and serve.
