Pickled Yellow Beans (GF)
REALLY GOOD WITH CURRY.

INGREDIENTS:
Each quart of beans gets:
1/2 teaspoon hot red pepper
1 teaspoon whole mustard seed
1 teaspoon dill seed
2 cloves garlic
2 pickling onions (or Pearl onion)
Pickling Solution: for about 5 quarts of beans
5 cups apple cider vinegar (mom says it has to be Heinz)
5 cups water
1/2 cup salt (plain salt, or pickling salt -- no iodine)
INSTRUCTIONS:
Mix vinegar, water, salt, and boil
Pack beans into quarts
Put flavorings into each jar (pepper, mustard seed, dill seed, garlic, onions)
Pour in vinegar/salt/water mixture to fill up the jars.
Process 25-30 minutes (meaning, boiling for 25-30 minutes. Timing starts when it starts to boil.
After 25-30 minutes, turn off stove, let it stand for 10 minutes.
If the jars are doing a "big" boiling type thing inside when you pull them out, put them back in for another 10 minutes.
MAKES: 5 quarts
