This is a yummy salad as a little variety to what we usually eat. We thought the flavors blended really well together. Next time I would put less dressing on (I dumped all of it into the salad and tossed it--way too much).
From the kitchen of: "Savoring the Seasons: Our Best Bites" p. 216
INGREDIENTS:
1 head romaine lettuce, torn (about 6-8 cups)
3 cups loosely packed spinach
1/4 cup thinly sliced red onions
1/3 cup raisins
1/2 cup roughly chopped walnuts, toasted
2 oranges, segmented (ie no membrane)
Dressing Ingredients:
1/4 cup white wine vinegar
1/4 cup sugar
2 t Dijon mustard
3 T minced onion
1 t paprika
2 1/2 t celery seed
1 t kosher salt
1 c canola oil
INSTRUCTIONS:
Toss lettuce and spinach together in a large salad bowl. Sprinkle with onion, raisins, and walnuts. Top with dressing and toss to coat. Add orange segments and toss gently.
For the dressing: Combine vinegar, sugar, mustard, minced onion, paprika, celery seed, and salt in a blender and process until smooth, about 20-30 seconds. With the blender running on low speed, add the oil in a slow, stead stream until incorporated. Pour the dressing into a jar or other container and refrigerate.
MAKES: 8-10 servings
