Fortune Cookies

I made these for the first time on New Year's Eve 2021 - we brought in the New Year with great fortunes! They are a little time-consuming because you can only make a few at a time, but they are a special occasion sort of treat!
ingredients:
2 large egg whites
½ teaspoon vanilla extract
½ cup all-purpose flour
½ cup sugar
1 pinch salt
3 tablespoons water - I didn't use all 3 Tbs.

instructions:
Preheat the oven to 425˚F (220˚C). I did 400˚F with the convection bake setting on my oven. 425 cooked the edges too fast and the middle was soft.
Add the egg whites and vanilla extract to a medium bowl and use a whisk or hand mixer to beat until frothy, about 1 minute.
Sift in the flour, sugar, and salt through a fine-mesh sieve.
Using a spatula, gently incorporate into the batter until paste-like.
Add the water, 1 tablespoon at a time, until the batter is smooth and falls into ribbons when the spatula is picked up. I didn't use all 3 Tbs
Place 1 tablespoon of batter onto a silpat-lined baking sheet and spread into a 3-inch (7-cm) circle. Try to make them as uniform as possible so they all look about the same when they're done
Repeat with another tablespoon of batter, making sure to only leave two circles on the silpat. Don't use parchment, it wrinkles up when wet and the cookie is wrinkled. I was able to handle 6 on one tray at a time. Then I add another tray of 6 to another cookie sheet about halfway through the cooking time. It's doable if no children are bugging you!
Bake for 8 minutes, until the edges become golden brown. I did 10 minutes at 400 and that was pretty perfect, but not much more! A little less is better than a little too much probably.
Working quickly, use a spatula to remove the cookies from the pan. This is the hardest part because they do stick a little bit. I got them all "off" the pan, but just put it back on so they stayed warm and pliable. Add a fortune in the middle, fold the cookies in half, then place the flat side on the lip of a cup, folding the edges down into a fortune cookie shape. Place the folded fortune cookies in a mini muffin tin until cooled to retain their shape.
Repeat with the remaining batter.
