WE LIKE MANICOTTI, AND NOW THIS VERSION MAKES ME FEEL A TINY BIT BETTER ABOUT IT BECAUSE IT'S NOT ONLY STUFFED WITH CHEESE, BUT WITH SPINACH!

INGREDIENTS:
1 (15oz) container ricotta cheese
1 (10 oz) package frozen chopped spinach, thawed and squeezed dry. (I actually had fresh spinach which I chopped myself, and I only used about 5 oz because it seemed like a ton of spinach. I thought it ended up great.)
1/2 C minced onion
1 egg
2 tsp parsley
1/2 tsp pepper
1/4 tsp garlic powder
1 1/2 C shredded mozzarella cheese, divided
1/2 C grated Parmesan cheese, divided
2 (26 oz) jars spaghetti sauce (I used 3+ cups of homemade sauce).
1 1/2 C water
1 (8 oz) package manicotti shells (could have stuffed about 4 more - we ended up crumbling the extra stuffing on the top)
INSTRUCTIONS:
Preheat oven to 350
In a large bowl, combine ricotta, spinach, onion, and egg
Season with parsley, pepper, and garlic powder.
Mix in 1 C mozzarella and 1/4 C Parmesan.
In a separate bowl, stir together spaghetti sauce and water.
Spread 1 C sauce/water in the bottom of a 9x13 inch baking dish.
Stuff uncooked manicotti shells with ricotta mixture, and arrange in a single layer in the dish.
Cover with remaining sauce, and sprinking with remaining mozzarella and Parmesan.
Bake in preheated oven for 45-55 min., or until noodles are soft.
MAKES: "6 servings" - I think that's 2 manicottis each, more if you stuff more noodles.
