Chocolate Zucchini Cake

Also called "The best chocolate cake in the world" on the recipe -- one of Katie's family's recipes.  Pretty tasty, if I do say so myself.

From the kitchen of: The Boren Family  

INGREDIENTS:

• 1/4 C butter, soft

• 1 tsp vanilla

• 2 eggs

• 1/2 C sour cream

• 1/4 C oil (the recipe has "1/4 applesauce instead" penciled in here)

• 1 3/4 C sugar

• 2 C grated Zucchini

  • [mix the above together and add:]

• 2 1/4 C flour

• 1 tsp salt

• 1 tsp baking powder

• 4 Tbs cocoa

• 1 tsp soda

INSTRUCTIONS:

1. Before baking at 350 for 40-45 minutes in a greased and floured pan, put together 1 C chocolate chips and 1 C brown sugar.  

2. Sprinkle on top of cake.

3. This is also on the bottom of the recipe:  "We like this to taste like brownies so when I make it I usually put it in a long pan and a square pan.  The long pan for 30 minutes.  The square pan for 20 minutes."
