A simple dish that the kids surprisingly enjoyed -- okay, tolerated. I thought it was good.
(Note to self: We ate this no problem. Next time: Tripple it)
1 lb. carrots
1 Tbsp olive oil
1/2 Tbsp curry powder
1/4 tsp salt
Handful fresh cilantro (optional)
Peel the carrots and cut them to 1/4" slices. Mix in a bowl with the olive oil, curry powder, and salt. Spread on a baking sheet with those handy silicone non-stick mats. Bake at 400 for 30 minutes.
