Cheesy Taco Skillet
Found this one in Pinterest with lots of good reviews. We tried it and I love it! Low carb, low calorie, packed with veggies, and easy on the credit card. From the kitchen of: Marilyn & Kim
INGREDIENTS:
1 lb lean ground beef
salt & pepper
1 large yellow onion, diced
1 can black beans, drained
2 bell peppers, diced
1 can, or equivalent fresh diced tomatoes
Small can mild green chilis
2 cups kale and/or spinach mixture (it cooks down to nearly nothing)
1-1/2 cup shredded cheddar and jack cheese
Green onions, more tomatoes to garnish
Sour cream
INSTRUCTIONS:
In a large pan, *lightly* brown the ground beef and crumble well. Salt & pepper. Drain excess fat.
Add onions, peppers and cook until browned.
Add diced tomatoes & green chilis
Add greens let fully wilt
Add black beans & rice
Mix well
Cover with shredded cheese and let cheese melt
Garnish with tomatoes, green onions, sour cream.
If you're really health conscious you can use ground chicken or turkey meat, and mozzerella cheese instead of cheddar...but it won't taste as good. :-) You can also serve this in a burrito wrap.
