About: I made this for Christmas in July 2023 and I loved how quick, easy, and festive they turned out. I didn't have to turn on the oven either which is always a big plus in July! Original recipe is a little different... HERE
6 Tbs Butter
2 10oz bags of mini marshmallows (I had a little less, but it worked out)
1/2 tsp peppermint extract (make sure it's extract, not oil)
pinch of salt
12oz Crispy Rice Cereal
1 C White chocolate chips (Save some for the top)
3oz crushed peppermint candy or candy canes
Grease 9x13 pan or use greased foil to line it so you can easily take it out to cut and to clean. I think this recipe could be split into 2 9x13 pans as well to make shorter treats.
Pre-measure the Crispy Rice Cereal into a very large bowl.
In a large heavy-bottomed pot over medium-low heat, melt the butter.
Add the marshmallows and stir until almost completely melted.
Remove from the heat (any unmelted marshmallow will continue to liquefy) and stir in the peppermint extract and salt.
Pour into the Crispy Rice Cereal.
Add most of the white chocolate chips and stir until evenly mixed.
Press the mixture into the pan and smooth the top with a greased spoon or the bottom of a measuring cup.
Add the rest of the white chocolate chips and crushed peppermint candy and press it into the top of the treats.
Let cool before slicing and serving.
A single 9x13 pan. For Christmas in July purposes... I doubled the recipe and split it into 3, 9x13 pans. Each pan yielded 35 pieces (5x7 cuts)
