A recipe from my UVU Community Ed cooking class. Delicious. Make sure to rub the slices of toasted bread with garlic cloves, then salt, and serve warm.
INGREDIENTS:
Italian crusty bread, 1/2" thick slices
Extra-virgin olive oil
1 to 2 cloves garlic, cut in half
Coarse kosher or sea salt
Freshly ground pepper
INSTRUCTIONS:
Brush or drizzle bread slices with extra-virgin olive oil. Arrange the bread slices on a hot grate and grill until nicely browned on both sides, 2 to 4 minutes per side.
Transfer the bread slices to a cooling rack and let cool for 1 minute. This prevents steam from forming on a platter under the bread, which would make the slices soggy.
Rub the top of each bread slice generously with cut garlic then sprinkle with salt and pepper. Serve immediately.
