Not fancy, but definitely tasty. And it gives me a good excuse to make the Tuscan Bread to go with it. From the kitchen of: Brett
Chicken (you decide how much)
Noodles (we like fettuccine... again, you decide the appropriate amount)
Sauce:
1/2 C butter
8 oz. cream cheese (room temp.)
2 Tbs flour
2 C whole milk, cream or half and half (can use less fatty milk if you want... but it will be less fatty... therefore, less creamy, and probably, a little less tasty).
1/2 C Parmesan cheese
Salt & pepper & parsley to taste
I would have liked to add some chopped peppers and/or garlic
Cut and pan fry the chicken in a tablespoon of olive oil, adding a little garlic salt and pepper.
Cook the noodles according to directions on the package.
For the sauce:
Melt butter over low heat (do not burn)
Cut the cream cheese into small cubes and whisk in to the melted butter until completely combined (just keep stirring, stirring, stirring)
Pour in the milk and add the flour and continue whisking.
Once the mixture is combined into a smooth cream, add salt, pepper, parsley, and Parmesan.
Let sit for a few minutes to thicken.
Mix the chicken, noodles, and sauce all together and serve!
MAKES: Enough sauce to cover approximately a 16oz box of fettuccine.
