Swiss Steak, Marilyn Style
This faux swiss steak is form Marilyn's special diet
INGREDIENTS:
1-1/2 lbs organic beef steak
Almond flour
Olive oil
Sea salt
Granulated garlic
1-2 cups mushrooms
1-2 fresh minced garlic cloves
Concentrated cashew milk
1 cup cashews (or almonds)
2 cups filtered water
1/2 Tbs tapioca starch
Salt to taste
INSTRUCTIONS:
Pound out 1 1/2 lbs organic beef steak. Coat both sides with Almond flour and slow cook in a generous (maybe 3-4 T) of Olive oil. Sprinkle generously with sea salt and granulated garlic. Cook slowly. When it is 1/2 cooked, add 1-2 cups of mushrooms and 1-2 minced fresh garlic and let them absorb the flavor till cooked.
Remove cooked mushrooms and steak and set aside, then keeping the oil and drippings add concentrated (like evaporated milk) cashew milk
Directions for making concentrated Cashew Milk:(I made it by adding 1 cup nuts- putting in the blender and chopping it up well. Add 2 cups of filtered water and let soak for an hour, then blend it at high speed for about 5 minutes. That makes your concentrated milk which tastes creamier. You can make it with almonds or cashews, but I think it would be better with cashews.
I added 2 cups of concentrated milk mixed up well with 1/2 T organic tapioca starch. to the drippings and mixed it, adding sea salt to taste. Serve over steak and mushrooms or over Organic quinoa
