Spicy Cheesy Zucchini
From the kitchen of Marilyn. She made this up and it's nummy. I haven't specified amounts because you can make a little or a lot and just let logic tell you how much of what to use. The recipe isn't strict.
INGREDIENTS:
Zucchini
Onions
Sour Cream
Pepper Jack Cheese (or other cheese will work fine but the spice in pepper jack really makes this come to life)
Oil for cooking
Salt & Pepper
HOW TO THROW IT TOGETHER:
Chop up the amount of Zucchini you want to have and put it in a frying pan
Chop up the onions and add to the zucchini in the pan. Sauté in oil until the desired consistency is obtained. (different strokes for different folks)
Salt & pepper to taste
Add a dollop of sour cream and stir in
Add shredded cheese until melted and stir until well mixed and cheese is melted
