INGREDIENTS:
6 C. warm water
10-12 C Freshly ground White wheat flour
2 T Salt
2/3 C oil (I use olive oil)
2/3 honey
3 T dough Enhancer
3. T Insant Yeast
sometimes I add 1 T of gluten if the dough doesn't look like it is elastic enough (holding together well)
INSTRUCTIONS:
I mix all of the above ingredients, let it sit for 5 minutes and then add enough flour until the sides of the bosch are cleaned. Knead for 6 minutes to develop the gluten. Divide into 4 loaves and let rise in greased (Spray grease -- no need to do shortening and flour) non stick pans till doubled. Bake at 355 for 37 minutes. (my original recipe says to divide into 5 loaves and bake at 325 for 25 min, but that makes pretty puny loaves).
If Raisin Bread is desired, soak raisins (or other dried fruits) for about 10 min to soften them, drain and add to dough along with 1 t. cinnamon per loaf
