"My doctor told me to quit throwing dinner parties for 4 unless there are 3 other people - [sigh]" - Gramps
This stuff is just dang good. The recipe ain't precise so feel free to add details. Christa introduced me to the sauce on a block of cream cheese for a cracker dip. I was the genius that tried it on chicken.
From the kitchen of: Kim (shh...don't tell Marilyn it's partly mine)
Fischer & Wieser Razzpotle Roasted Raspberry Chipotle Sauce (Costco or Amazon)
We've tried other brands. Yuck.
Rice (medium grain...not that minute rice garbage)
Chicken chunks.
If you buy them already breaded, skip to the instructions
Crushed Ritz crackers
Sage & parsley flakes (optional, but good)
Salt/Pepper
flour
beaten egg
Get the rice on to cook
Crush Ritz crackers and add some sage & salt & pepper
Roll moistened chicken chunks in flour
Dip flour coated chicken chunks in egg
Roll egg covered chicken in crackers
Cook
fry the beejeebers out of it (deep fry, pan fry, etc.)
Bake at 400 degrees for 20 minutes (I prefer this way)
Heat some of that yummy sauce then pour it on the chicken and mix it up a bit to get the chicken coated.
MAKES:
Depends on how much chicken & rice you cook I suppose.
