Lemon Bars

This is one of my Dad's favorites... we used to make these instead of birthday cake for him.

INGREDIENTS & INSTRUCTIONS: For Crust

• 1 C soft butter or margarine

• 1/2 C pd sugar

• 1/4 tsp salt

• 2 C flour

1. Combine and mix ingredients well

2. Press into a 9x13 buttered pan

3. Bake at 350°F for 15 min.

INGREDIENTS & INSTRUCTIONS: For filling

• 4 eggs, beaten

• 2 C sugar

• 1/4 C flour

• 6 Tbs. lemon juice

1. Combine flour and sugar.

2. Beat in eggs and lemon juice.

3. Pour onto baked crust and return to oven for 25 min. at 350°F or until set.

4. Cool and sprinkle powdered sugar on top *** WARNING: powdered sugar on top of these kinds of treats is easily inhaled while you are prepping to take a bite... you've been warned.

MAKES: There's enough stuff for a 9x13 pan, but how many pieces you decide to cut is up to you :)
