Lemon Bars
This is one of my Dad's favorites... we used to make these instead of birthday cake for him.

INGREDIENTS & INSTRUCTIONS: For Crust
1 C soft butter or margarine
1/2 C pd sugar
1/4 tsp salt
2 C flour
Combine and mix ingredients well
Press into a 9x13 buttered pan
Bake at 350°F for 15 min.
INGREDIENTS & INSTRUCTIONS: For filling
4 eggs, beaten
2 C sugar
1/4 C flour
6 Tbs. lemon juice
Combine flour and sugar.
Beat in eggs and lemon juice.
Pour onto baked crust and return to oven for 25 min. at 350°F or until set.
Cool and sprinkle powdered sugar on top *** WARNING: powdered sugar on top of these kinds of treats is easily inhaled while you are prepping to take a bite... you've been warned.
MAKES: There's enough stuff for a 9x13 pan, but how many pieces you decide to cut is up to you :)
