THIS IS THE RECIPE WE USE FOR CRESCENT ROLLS, CINNAMON ROLLS, AND ORANGE ROLLS...YUM!!! From the kitchen of: Terese Hansen (our neighbor, piano teacher, and Katie's second mother growing up)
INSTRUCTIONS:
1. Dissolve and let foam
4 C warm water
1 Tbs sugar
3 Tbs yeast
2. Add and mix for 5 min.
1/2 C non-instant or 1 C instant milk powder
3/4 C sugar
4 eggs
1 C oil
1 Tbs salt
6 C flour
3. Add about 6 more cups of flour (the dough will be quite sticky - I usually end up putting more flour in at the end while I'm working it into rolls)
4. Knead for 5 min. in the Bosch :)
5. Place in a lightly oiled bowl and let raise for 1 hour or more until light.
FOR DINNER ROLLS:
Roll small amount (about like a soft ball) into a circle.
Brush with melted butter.
Cut into wedges with pizza cutter.
Roll up from wide edge and place on greased cookie sheet.
Brush outside with melted butter.
Let raise 30-45 min.
Bake at 350ºF for 15 min.
FOR CINNAMON ROLLS:
Roll about 1/4 of the dough at a time into a rectangle about 1/2 inch thick.
Brush with melted butter, sprinkle with brown sugar, cinnamon, raisins or nuts.
Roll up jelly-roll style and cut into rolls with sewing thread (I've used floss before... adds just a touch of mint...)
Place rolls on greased cookie sheet and let raise 30-45min.
Bake at 350ºF for 15 min.
Frost while warm... yummy!
FOR ORANGE ROLLS:
Sugar orange stuff for inside: 1/4 C melted butter, 1/3 C sugar, 1 tsp orange extract, 1 tsp orange rind (this is flexible... use more orange if you want to)
Roll dough into a rectangle.
Spread butter/orange mixture onto the dough.
Cut into 4 strips about 1.5 in. wide and stack on top of each other.
Cut off 1.5 in. segments and place in greased muffin tins.
Let raise 30-45 min.
Bake at 350ºF for 15 min (should start turning a little bit brown (be careful of dark metal muffin tins... may need to turn down temp to not burn the part inside the cup).
Frost with an orange glaze: 4 C powdered sugar, 2 Tbs butter, 1/2 tsp vanilla, 1/2 tsp orange extract, sprinkle of salt, add milk to desired consistency.
MAKES: 4 doz. sweet or 5 doz. dinner rolls
