"My doctor told me to quit throwing dinner parties for 4 unless there are 3 other people - [sigh]" - Gramps
I LOVE THAT THESE CAN BE MADE WITH A CAKE MIX AND THEY INVOLVE CREAM CHEESE - HOW COULD THEY NOT BE AMAZING!
From the kitchen of: Allrecipes - found by Katie
INGREDIENTS:
1 (18.25oz) package devil's food cake mix
1 (8oz) package cream cheese
1 C white sugar
1 C semisweet chocolate chips (this really is one of those times when I think the semisweet really brings it home)
INSTRUCTIONS:
Preheat oven according to package directions.
Line muffin pans with paper liners (I did this both as mini-cupcakes and the normal sized and both worked well, though I think I prefer the mini ones because you can eat more of them and not feel as much guilt).
Prepare the cake mix as specified on the box and fill the cupcake papers 1/3 full.
In a separate bowl, combine the softened cream cheese and sugar until smooth.
Fold in chocolate chips.
Add a spoonful of the cream cheese mixture to the top of each cupcake (mine sunk in a little, so it was like a cream cheese filling when baked).
Bake according to box instructions or until the cream cheese mixture just starts to turn a light golden color.
MAKES:2+ dozen normal sized cupcakes - or a billion little ones.
