INGREDIENTS:
2 lbs peaches per quart (up to 3 lbs)
2 1/4 c sugar
5 1/4 c water
fresh fruit or other fruit protector (I skip this step)
INSTRUCTIONS:
Combine water and sugar and heat until dissolved. Keep syrup hot.
Prepare peaches (peel, slices or halves)
Fill quart jars with peaches (cut side down) and syrup until 1/2 in. head space.
Process for 30 minutes.
MAKES:As many quarts as you're after--double as necessary
