Peach Salsa
CAN BE EITHER MADE INTO REGULAR SALSA OR PEACH SALSA.
From the kitchen of: Kari Pike (one of Katie's old neighbors)
INGREDIENTS:
4 C pealed, chopped, and drained tomatoes
4 C pealed, and chopped peaches (you can omit these, and just add 4 cups more tomatoes)
2 1/2 C chopped onion
1 C green pepper
1/2 C red pepper
1/2 C yellow pepper
4 oz can jalepenos (I used 3 fresh - add the seeds to make it hotter)
4 oz can diced green chilis
6 cloves garlic, minced
1 tsp ground cumin
1 tsp black pepper
2 Tbs salt
1/3 C sugar
1/3 C lemon or lime juice
12 oz can tomato paste
1/4 C chopped cilantro
INSTRUCTIONS:
Mix and refrigerate or bring to a boil for bottling.
If bottling, simmer 20-30 minutes until hot through.
Bottle and process 45 min.
MAKES: About 6 pints
