Mom's Pork Medallions
1 lb Pork Tenderloin
olive oil
2 tsp lemon pepper
2 tbsp butter
2 tbsp lemon juice
1 tsp dijon mustard
1 tbsp wosterschire
1 tbsp parsley
diced green onions
Slice pork 1/4 thk slices and tenderize, flatten w/ mallet.
Brown in olive oil over med high heat
Remove to warm plate
Reduce heat and deglaze pan with other ingredients.
Top medallions with sauce and green onions and serve immediately.
Delicious with fresh snow peas, rice or on Southern Buttermilk Biscuits
