METHOD FOR MANUFACTURING NOODLE COMPRISING GERMINATED AND HYDROTHERMALLY TREATED BROWN RICE AND NOODLE THEREFROM
PURPOSE: A producing method of noodles containing hot water processed-germinated brown rice, and the noodles are provided to offer the improved texture and the reduced water absorbency to the noodles. CONSTITUTION: A producing method of noodles containing hot water processed-germinated brown rice comprises the following steps: hot water processing germinated brown rice for 1-8 hours at 60-130 deg C; crushing the hot water processed-germinated brown rice to obtain germinated brown rice powder; and producing the noodles using the germinated brown rice powder.
