A method for preparing brown rice bread is provided to ensure high contents of fiber and nutrients by germinating an embryo bud of rice, heating and pulverizing the germinated embryo bud of rice and mixing barley powder and wheat flour to the pulverized the embryo bud of rice. A method for preparing brown rice bread comprises the following steps of: placing an embryo bud of rice in water for 20 hours or longer in order to germinate the embryo bud of rice; steaming the germinated embryo bud of rice at a ultra-high temperature and drying the steamed embryo bud of rice so as to prepare a germinated brown rice powder; and mixing the germinated brown rice powder and barley flour or wheat flour in a ratio of 0.5 to 99.5 and kneading the mixture in order to prepare the brown rice bread.
