1 large apple (e.g. honey crisp, granny smith), sliced
1/2 cup pecans, toasted
1/2 feta or goat cheese, diced
1/2 cup dried cranberries or raisins
1/4 cup red onion, thinly sliced
salt and pepper to taste
Vinaigrette
1/2 cup olive oil
1/4 cup apple cider vinegar
1 tbsp dijon mustard
1 tbsp maple syrup or honey
Salt and pepper to taste
Prepare salad and vinaigrette and serve.
