Cauliflower with Butter & Hot Sauce

Serves 3

1 large head of cauliflower, cut into bite-sized florets (about 8 cups)

3 tbsp olive oil

Kosher salt

3 tbsp Frank's red hot sauce

large handful of coarsley chopped fresh cilantro or chives, for serving.


Preheat ven to 425. Put cauliflower florets in a bowl, drizzle with oil and sprinkle with 1/2 tsp salt and toss then place on a rimmed baking sheet. Roast for about 35 minutes, stirring every now and then, until cauliflower is soften and browned.

Whisk together butter and hot sauce in a large bowl. Add hot cauliflower and toss to coat. Taste and season with more salt and/or hot sauce.


Transfr to a serving platter, sprinkle with cilantro or chives- serve right away.
