Old West Baked Beans

1 lb dried navy beans or pink beans 

2 large onions, diced 

12 oz smoked pork, or ham steak, chopped 

3 cups chicken stock 

¼ tsp cayenne pepper 

¼ cup dark molasses 

¼ cup ketchup 

3 tbsp dark brown sugar (plus more as needed) 

Salt and pepper to taste 

Soak beans overnight in water in a large bowl.

Sauté onions and pork over medium heat until onions are tender (about 10 minutes).

In a crock pot - add drained beans, onions, pork, chicken stock, cayenne pepper, molasses, ketchup, brown sugar and salt and pepper. 

Cook for 6 to 10 hours (until beans are soft)
