Eggplant, Roasted Red Pepper, and Goat Cheese Sandwiches

Serves 4

1 eggplant, cut lengthwise into 1/2 inch thick slices

olive oil cooking spray

250 g goat cheese

8 slices whole grain bread

2 roasted red peppers

8 large basil leaves

salt and pepper to taste

Spray eggplant slices with olive oil cooking spray.  Grill eggplant either in oven on broil or on a grill on medium-high heat until golden brown.

Spread goat cheese over bread, top with eggplant, roasted red pepper and basil. Season with salt and pepper. Serve.
