Turkey Loaf

Serves 4 (with 2 loaves)

2 tbsp olive oil 

2 purple onions 

½ cup celery, chop finely 

Sea salt and ground pepper 

4 eggs 

3 tbsp tomato paste 

¾ cup chicken broth 

2.5 lbs ground turkey 

¾ cup oat bran 

½ cup flax seeds 

Preheat oven to 375.

Heat oil in frying pan and cook onions and celery until translucent. Season to taste with salt and pepper and transfer to small bowl to cool. 

In a large bowl, add eggs, tomato paste and broth. Mix well. Add turkey, oat bran and flax seeds along with onion and celery mix.

Coat 2 loaf pans with cooking spray, place half of mixture in each. Bake 1 ½ hours or until meat thermometer is 71.
