Sweet Potato Puree
Serves 3
600g sweet potatoes, unpeeled
4 tbsp butter
1 tsp ground ginger
2-3 tsp maple syrup, or to taste
salt to taste
Preheat oven to 375.
Place sweet potatoes on a parchment-lined baking sheet or in a roasting pan and pierce in a few places. Bake until very soft, 30-60 minutes depending on size of sweet potatoes.
While sweet potato are warm but cool enough to handle, cut half lengthwise. Use a spoon to scoop out the flesh and place in a mixing bowl. Use a wire whisk, vegetable masher or hand mixer to make a smooth puree. Add in butter, maple syrup, ginger and salt to taste - mix to combine.
Reheat in a small sauce pan before serving.
