Parsnip Fries

Serves 4 to 6

2 lb parsnips

1 tbsp olive oil

1/4 tsp sea salt

Preheat oven to 425.

Peel and cut parsnips into 1/4 inch square fries. Toss with olive oil and sea salt and spread in a single layer on 2 parchment paper-lined baking sheets. Place in the middle and lower two-thirds racks for 25 to 30 minutes or until edges and bottoms are golden brown.  Switch positions of baking sheets half-way through.  Serve.
