Gnoochi and Mushrooms

Serves 4 

Gnocchi 

½ cup dried porcini mushrooms 

Olive oil 

2 links hot Italian sausage, casings removed and broken up 

½ onion, chopped 

1 ½ cups fresh mushrooms, chopped 

¾ cup white wine 

Sprig fresh thyme 

½ cup grated parmesan cheese 

To prepare dried mushrooms, put in glass measuring cup, steep mushrooms in enough boiling water to cover them for about 15 minutes. Drain mushrooms and chop but keep mushroom water. 

In a frying pan, add a little olive oil, sauté broken sausages until meat is cooked. Add fresh mushrooms, wine, chopped porcini mushrooms, reserved porcini mushroom water, thyme. Simmer slowly on low heat. Prepare pasta. Be careful not to let the mushroom mix to get too dry.

After past cooks, add it to mushroom mixture. Stir. Serve with grated cheese.
