Serves 4
2 medium cucumbers, thinly sliced
1/2 tsp salt
2 green onions, finely chopped
1 clove garlic, minced
1 tbsp Gochujang paste
1 tbsp sesame oil
1tbsp soy sauce
1/2 tsp sugar
1 tbsp rice vinegar
1 tsp toasted sesame seeds
Thinly slice cucumbers and place them in a bowl. Sprinkle them with salt and let them sit 10-15 minutes to draw out excess water. Then rinse the cucumbers with cold water, drain well, squeezing out any extra water.
Make the sauce: combine the remaining ingredients (except sesame seeds) in a bowl, stirring until sugar dissolves.
Combine cucumbers and sauce, sprinkle sesame seeds on top and serve.
