Mushroom Toast

Serves 2

4 slices sourdough bread

4 tbsp olive oil

2 cups cremini mushrooms, sliced

2 cups button mushrooms, sliced

2 portabello mushrooms, sliced

6 cloves of garlic, minced

2 tsp chili flakes (add less if you don't like spice)

4 tbsp balsamic vinegar

4 tbsp chives or green onios, chopped

ball of fresh mozzarella or other spreadable cheese, like boursin

3 tbsp honey

3 tbsp fresh thyme chopped or 2 tsp dried

1/2 tsp salt, more to taste


Add oil to pan and sauté garlic for about 30 seconds. Add mushrooms and sauté until they're browned. The add thyme, salt and chili flakes - stir.

Add balsamic vinegar and a bit more olive oil if necessary. Add honey and stir well. 

Toast the bread (either with a toaster or in the oven), spread cheese on then pile mushrooms on top. Season with additional salt and fresh ground pepper if desired.
