Sloppy Joes

Serves 4

Canola or olive oil for cooking

1 onion, chopped

2-3 garlic cloves, crushed

1 lb veggie ground

1 can (796ml) crushed tomatoes

1/2 cup ketchup

2 tbsp brown sugar

1 tbsp apple cider vinegar

1 tbsp worcestershire sauce

salt and freshly ground pepper, to taste

soft hamburger buns

Using a large, heavy frying pan over medium heat, add a drizzle of oil to the pan and saute onions for 3-4 minutes or until soft. Add garlic and veggie ground and cook for about 5 minutes.

Add tomatoes, ketchup, sugar, vinegar, worcestershire sauce, salt and pepper. Bring mixture to a simmer and cook for 20 minutes, stirring occasionally until mixture thickens slightly.

Season to taste, adding more salt, pepper and vinegar as needed.

 

Serve hot over split buns.
