Chicken Tortilla Soup

Makes 6 Serving 

2 tbsp vegetable oil 

1 onion, chopped 

1 sweet red pepper, diced 

1 jalapeno pepper, seeded and minced 

2 cloves garlic, minced 

1 tsp ground cumin 

1 tsp dried oregano 

1 tsp chili powder 

3 plum tomatoes, chopped 

6 cups chicken broth 

2 cups diced or shredded cooked chicken 

1 cup corn kernals 

2 tbsp lime juice 

Pinch sugar 

Salt and pepper 

2 tbsp chopped fresh coriander 

Corn chips 

In sauce pot, heat oil over medium heat; add onion and cook until soft. Add both peppers, cook 5 minutes, stirring often. Add garlic, cumin, oregano and chili powder, cook for 2 minutes.

Stir in tomatoes and broth; bring to boil. Reduce heat and simmer (covered) for 20 minutes.

Add chicken and corn, simmer 2 minutes.

Just before serving, stir in lime juice, sugar, salt and pepper. Garnish with coriander and corn chips.
