Beef & Bean Taquitos with Cilantro Lime Dressing
Makes 12 taquitos
Filling
3 tbsp vegetables, divided
2 cloves garlic, minced
1/2 lb lean ground beef
15oz can black beans, drained
1/2 tbsp chili powder
1/2 tsp cornstarch
pinch cayenne pepper
1/4 tsp salt
12 6-inch yellow corn tortillas
Preheat oven to 425. Line rimmed baking sheet with aluminium foil. In a large skillet, heat 1 tbsp oil over medium heat. Add the garlic and cook for 2 minutes or until softened. Add ground beef and continue to cook until beef is thoroughly browned.
Add beans, chili powder, cornstarch, cayenne, salt and 1/2 cup of water to skillet. Stir until combined. Bring mixture to a simmer and cook for 5 minutes or until mixture is thick and bubbly. Mash beans slightly while the mixture simmers.
Stack the tortillas on a large plate and microwave for about 45 seconds. Keep them covered to keep them warm and prevent them drying out.
Place about 1/4 cup of filling into each tortilla, roll it tightly. Place rolled taquitos, seem side down on the baking sheet. Brush with vegetable oil, covering them on all sides. Bake in oven for 20 minutes or until golden brown. Serve hot with salsa, sour cream or cilantro lime dressing.

1/4 cup sour cream
1/2 tbsp honey
1/2 tsp salt
1/4 bunch fresh cilantro
