Spicy Passion Fruit Glazed Shrimp

½ cup water 

½ cup sugar 

½ cup passion fruit pulp (about 4 passion fruit) 

2 tbsp lime juice 

1 tsp soy sauce 

½ tsp salt 

32 large shrimp 

Cooking spray 

Lime wedges 

Bring water to boil, add sugar and boil until dissolved. Add passion fruit pulp, stirring well for 1 minute. Remove from heat and cool (for 15 minutes). Strain mix in a sieve, discard seeds. Add lime juice, soy sauce, red peppers and salt, stirring well. Set ½ cup of mixture aside. Add remaining mixture to shrimp and toss to coat well and marinate in the refrigerator for 15 minutes. 

Cook shrimp, add reserved rest of passion fruit mixture. 

Serve over rice with lime wedges.
