Pickled Beet, Arugula & Herbed Goat Cheese
Makes 1 sandwich
2 ounces goat cheese, softened
1 tablespoon snipped chives
1 tablespoon chopped fresh dill
1 teaspoon extra-virgin olive oil
Pinch of salt
Ground pepper to taste
2 slices whole-wheat sandwich bread, lightly toasted
1 tablespoon chopped walnuts, toasted
2 ounces sliced pickled beets
1 cup arugula

Mash goat cheese, chives, dill, oil, salt and pepper together in a small bowl. Spread the goat cheese mixture on one side of each toast slice. Sprinkle walnuts over one slice then layer on beets and arugula. Top with the second slice of toast, cheese-side down, and cut the sandwich in half.
