Makes 5 bowls
Base and Toppings
5 cups cooked brown rice (cooked using chicken or beef broth)
2 cups diced Kalamata olives
2 cups tzatziki
one cucumber, diced
2 cups red onion, diced
3 tomatoes, diced
1.5 cups of hummus
1.5 cups diced peppercinos
1.5 cups of feta
Greek Meatballs
1/2 cup grated red or yellow onion (about 1/2 a large onion)
1 medium tomato, grated
1.5lbs ground beef (or Impossible Meat)
1/2 cup panko bread crumbs
1 egg, beaten (or 3 tbsp Just Egg)
1/3 cup fresh mint, finely chopped
1/3 cup fresh parsley, finely chopped
1 tsp dried oregano
1 tsp ground coriander
1/2 tsp ground cumin
salt and pepper
Place grated onion and tomato in a fine mesh sieve over the sink and stir a few times, pressing on mixture to drain excess liquid (some moisture should remain). Transfer to a large bowl. Add rest of ingredients except tzatziki and hummus) and mixed thoroughly.
Can make small meatballs and fry them in a pan, bake them in the oven (350 for 40 minutes) or put the mixture in a loaf pan and bake it in the oven (350 for 50 minutes).
Serve meatballs with bowl along with hummus and tzatziki.
