Millet Pulao with Vegetables
Serves 2
1/4 cup + 2 tbsp cup hulled millet
1 tbsp vegetable oil
1/4 cup onion, diced
1/2 tsp garam masala
1/4 tsp ground turmeric
1/4 cup + 2 tbsp mixed vegetables (e.g. carrots, peas, green beans, cauliflower, etc)
3/4 cup water or vegetable stock
soak millet in about 1 cup of water (room temperature) and set aside for at least 15 minutes.
prepare vegetables: mince onion, cut vegetables into 1/4 inch dice
heat oil in medium-sized saucepan over medium-high heat. Add onion and a pinch of salt and sauté until softened. Add garam masala and turmeric and stir fry for a minute.
drain millet. Add vegetables and millet and stir to coat with spices.
increase heat to high and water/stock. Bring to a boil, reduce heat to low and cover. Simmer gently for 15-20 minutes or until all liquid is absorbed.
fluff millet with fork and season with salt to taste.
